I went through my cooking light magazine and found a recipe for pork tenderloin that sounded really good. We made it last night, and it was so tasty! I don't know if it's the spices or the way it's cooked, or what - but it's super moist!
Here's the recipe for Spiced Pork Tenderloin with Maple-Chipotle Sauce. I didn't deviate from the recipe at all, and it was great!
With that, we had mashed potatoes (I stink at making those, but my husband does not! Yay!) and green beans. For the green beans, I loosely followed this recipe for Green Beans with Mushrooms and Bacon. I only had about 1 lb of green beans, and I just threw in a handful of mushrooms. We used 4 slices of center-cut bacon, and just chopped up a shallot (didn't measure it). I totally forgot to add the spices, but it didn't matter at all!
We also had a small salad, because I'm trying to have a salad with every meal. Of course, for this one, we ate it with light blue cheese, which sort of defeats the purpose. It was still tasty, though!
I'm trying a few more new recips this week - a spinach salad from cooking light and a whiskey chicken recipe. I also bought ingredients for some of our regular meals - Pasta Fagioli and Pasta with Vodka Sauce. Next weekend, I want to try this health garden risotto recipe I saw on the food network.

Spagetti and Meatballs (with real meat!) - and Suasage
I made spagetti and meatballs last night. It was so tasty! I had to call my mom to see how she makes it, because hers is my favorite! I don't know if it's a childhood thing or what, but it always tastes so good to me! It's pretty easy, and Martin liked it, too.
For the sauce, start with 2 large (28 oz?) cans of pureed tomatoes.
Add water - about 1/2-3/4 of one of the cans.
Add one tbl. (or a little more, to taste) of basil, oregano, and sugar.
Add garlic powder or garlic salt, to taste.
Add salt and pepper.
Then, cook the Italian sausage (I use hot). Once it's finished, slice it into smaller pieces. I sliced it into thirds. Mine wasn't 100% cooked all the way through, but that's ok. Add the sausage pieces to the sauce.
Next, make meatballs.
I used 85% lean ground beef (the only time I've bought ground beef in years!), one egg, salt and pepper, Italian bread crumbs, a little milk, some garlic powder, and parmesean cheese.
My mom fries them in a skillet, so that's what I did, too! I cooked them right in the same pan that the sausage was in...super tasty! Once they're finished, put them in the sauce too.
I let the whole thing simmer for about an hour - maybe a little more.
We actually didn't have it with spagetti (I'm not a big fan of spagetti), but used rotini instead.
Super yummy! We also had some fresh bread (yum!) and a caesar salad. I love the Newman's non-creamy caesar - a little better for you and really good!

More tasty Treats
On Saturday, we made dirty risotto again, because it is just that good!!! We made it on Saturday night and watched a movie - it was great! On Sunday, I made Roast Chicken Provencale, which I also made once before. This time, though, I had the Herbes de Provence (from Penzey's), and it really did make a difference! It was delicious! I also made Ina's Broccoli and Bow Ties, and they tasted really good together. As a special treat, we had Limoncello Cheesecake Squares for dessert. We have a ton left, so I might even try freezing some.
I really can't even think of what else we ate last week! I made pot pies (maybe on Wednesday?), and I know we had Salmon Burgers one night. I got an email a while ago from Vital Choice seafood, and I decided to try their salmon. It's very expensive, and we don't exactly love salmon, but we don't hate it, either. I got Salmon Burgers and these things that are supposed to be "salmon sausage." I doubt they'll be anything like sausage, but I hoped maybe the additional seasonings would be good! I can't report back on that yet. So far, all we tried were the salmon burgers. I cooked it on the stove in a pan for 4 minutes a side (frozen!), and then I just made a dill sauce to go with it. It came out ok...not awesome, but healthy and not bad. The sauce was good...I used low fat sour cream, a little bit of light mayo, some chopped shallots, dill, and maybe some lemon joice (?). We just had the burgers on buns with the sauce and sliced cucumbers.
We may have had the roasted red pepper and goat cheese sandwiches one night, but after a very long week, it's hard to remember! I think so, though.
We were very good and had a salad pretty much every night! I alternated between the Penzey's French Vinaigrette and a dressing made from Raspberry Enlightenment (also from Penzey's).
This week, we're trying a falafel recipe, black bean burgers, and hopefully (depending on when our grill parts arrive) chicken and tapenade sandwiches. Lil C has his surgery at the end of the week, so I don't want to make anything too involved on Thursday!
